Most of my lunchbox (husband’s) recipes are super simple & can be put together in 20 minutes. Shiva leaves home by 8:15 and it is difficult to make elaborate lunches. My goto lunchbox combos are variety rice with raita, roti & daal, sambar rice & poriyal. If there are any leftovers from previous night’s dinner we usually have it for breakfast.
Today I prepared this yummy coriander rice and it tasted so good. All you need is fresh bunch of coriander leaves & few other spices. The recipe has two parts. First you need to prepare thogayal (thick coriander chutney) and then masala mix using onion+tomatoes. I served it with carrot raita. However you can prepare potato fry or any other raita as a sidedish to this riceIf you have guests, you can prepare thogayal the previous day itself and the next day morning you can just prepare rice & onion masala, mix it with thogayal and serve. This will save your time 🙂
