Though I went to a basic baking class and learned few techniques, I still feel that it is not my forte.
To break the jinx and to make use of the old gas oven yesterday I thought of baking a muffin. Didn’t have enough ingredients to bake something sweet. So opted for a savory muffin. After referring gazillion You Tube videos and few recipes in websites , I came up with a mixmatch versions of those (according to the availability of ingredients) It took exactly 10 minutes to prep and 20 minutes to bake. Easy to go and a fool proof ?!! recipe I guess 🙂 Give it a try and let me know how was the output. The following measurement yields around 6 muffins.
Dry Ingredients :
- Plain flour – 1 cup
- Salt – a pinch
- Baking powder – 1/4 tsp
- Baking Soda – 1/4 tsp
- Finely chopped capsicum – 1/4 cup
- Finely chopped celery – 1 tbsp
- Chili Powder – 1/2 tbsp
- Grated Mild Cheddar Cheese – 1/2 cup.
Wet Ingredients :
Medium Egg – 1.
Melted unsalted butter – 1/4 cup.
Milk – 1/2 cup.
Take a big bowl and sift together flour,baking powder, baking soda.
Add a pinch of salt, chopped veggies, cheese and chili powder.
Using a small spoon or a wooden spatula gently mix the ingredients.
In a small bowl break egg and beat it nicely.
Add melted butter and 1/4 cup milk. Mix them all together.
Now pour the wet ingredients in the big bowl and start mixing them gently.
If your mixture is thick add little milk at the end and give it a stir.
The consistency should like paste and not too runny.
Grease the muffin pan with butter and some flour. If you have cupcake cases you can use them too.
Spoon in the mixture and bake in the preheated oven for 20 minutes.
Yummy muffins are ready. You can pack in snack box for kids or serve it as breakfast as well.
Oven Instructions :
I used Gas oven. So preheated it for about 20 minutes. If you are using a normal oven then you can preheat it at 180 c.
I baked for around 20 minutes. However after 15 minutes I would suggest you to insert a tooth pick and check if it comes out clean or else bake for an extra 3-4 minutes.
