Black Eyed Beans Curry / Lobia Curry
I love adding Legumes to my dishes often. Being a vegetarian these are the main source of protein for us. This Lobia curry can be prepared within 40 minutes and goes well with rice and roti

Ingredients
Instructions
  1. Soak Black Eyed Beans in hot water for 10 minutes. Pressure cook the beans for up to 5 whistles or until the bean becomes soft but not too mushy
  2. Heat oil in a pan. Add mustard seeds, jeera seeds and curry leaves. Let them splutter. Later add finely chopped onions ,tomato and ginger garlic pieces to the pan. Saute for 2-3 minutes
  3. Then add sambar powder, salt, turmeric and mix it well with Onion Tomato pieces. Using the back of the spatula mash the tomatoes well
  4. Now add the pressure cooked beans in the pan
  5. Add 1/2 cup of water and the let the whole mixture boil for about 7-8 minutes in medium flame. Remove from heat and if you have fresh coriander leaves garnish the masala with it before serving
  6. Delicious Lobia Masala is ready to be served with Chapathi
  7. You can even serve this curry with steamed rice during lunch as well.
