Ingredients

  1. Peel off the skin from Potatoes and chop them into cubes. Wash the broccoli florets in warm water
  2. Grate Carrot and keep it aside
  3. Chop all the other veggies finely
  4. Turn on ‘Sauté Mode’ in Instant Pot
  5. Add 1tsp Butter and oil
  6. Add Garlic and Onion. Stir for few seconds and add all the remaining chopped veggies
  7. Add salt, sambar powder,coriander powder. Give it a mix
  8. Add grated carrots, tomato puree, pav bhaji masala, tomato ketchup.Mix everything together
  9. Let the veggies be in Saute Mode for 3-4 minutes
  10. Then add 1 cup water and cancel the ‘Saute Mode’
  11. Now turn on ‘Pressure Cook’ mode and set the timer to 7.
  12. Once it is done you can wait for 4-5 minutes and manually release pressure
  13. Use a potato masher and mash the veggies
  14. Turn on ‘Saute Mode’ again and add Sweet Corn and let the whole mixture boil for a minute
  15. Delicous Bhaji is ready to be served. Adjust salt, squeeze lemon juice, garnish with kasuri methi leaves and add remaining butter while serving the Bhaji
  16. I had it with Rice last night for dinner and it tasted delicious
  17. Saved a cup of it to eat with my toasted bread today😋😋 It was wonderful
