To Temper :
Instructions
  1. Pressure cook Rice and leave the rice to cool down
  2. Heat Ghee in a wide bottomed vessel.
  3. Add Bayleaf,cinnamon stick,clove & elaichi
  4. Saute for a minute. Add Saunf,Mustard Seeds.
  5. Let them splutter
  6. Add Green Chilli,ginger garlic pieces. Continue sauteing for a minute. Fresh ginger & garlic is much more flavorful than paste
  7. Once the garlic turns mildly brown add finely chopped onions & tomatoes
  8. Saute it for upto 3-4 minutes
  9. Now add the chopped mushrooms and all dry powders
  10. In low flame keep sauteing the mushrooms
  11. It releases water and the spice mixture will get cooked in approximately ten minutes
  12. Don’t add extra water
  13. The mushroom mixture will turn to dark brown color, at this stage add cooked white rice
  14. Using a fork mix everything well
  15. At last add dried methi leaves or you can even add fresh herbs like coriander leaves,mint leaves
  16. Adjust salt and serve this biryani with raita of your choice
