If you are on diet and would like to eat a quick lunch without feeling guilty then this pan fried vegetables is the best option. I have used balsamic vinegar for seasoning the veggies however you can substitute it with soy sauce + any vinegar of your choice. The same goes with rice. You can substit

Ingredients
Instructions
  1. Cook noodles or rice of your choice and keep it ready
  2. Chop the vegetables length wise
  3. I have used onions,cauliflower, garlic, bell peppers, carrot and beans
  4. Heat olive oil in a pan and first toss the garlic with salt
  5. Then add in the chopped vegetables
  6. Keep sauteing until they start to become tender
  7. At this stage add balsamic vinegar, black pepper powder powder and oregano leaves
  8. Close the pan and lower the flame
  9. Let the vegetables get cooked for upto minutes 5 10
  10. In the mean time toast paneer or tofu to golden brown on a separate pan
  11. Add the paneer cubes to the vegetable mixture
  12. Toss it and serve pan fried vegetables along with a bowl of rice
  13. Quick and yummy lunch is ready in just 15 minutes
