Paneer and Cashewnut Pulao
On a lazy sunday if you have to cook a quick lunch then this Pulao is the best. It will take around 30 minutes to prepare this dish. The following measurement serves two.

  1. Soak Basmati Rice in water for about minutes one cup of 20
  2. Chop big onions,green chilles and garlic length wise
  3. Add a ghee in a heavy bottomed vessel or in a pressure cooker tbsp
  4. Add mustard seeds, bay leaf,cinnamon sticks, cardamom cloves.Let them splutter
  5. Then add chopped onions,green chillies and garlic to the pan.Saute until onions become translucent
  6. Now add soaked rice to this mixture. The ratio of basmati rice : water is always** 1:2
  7. Add coriander leaves,mint leaves and salt.Close the pan with a lid 1 tbsp
  8. Leave it for about 10 minutes. In the mean time add 1 tbsp of ghee in a skillet and roast cashewnuts.
  9. Cut fresh paneer into cubes. Marinate it with little salt and chilli powder.
  10. Roast Paneer in ghee until it turn golden brown.
  11. Now mix cashew nuts and Paneer to the rice.Paneer and cashew nut pulao is ready to be served.
