PottuKadalai (பொட்டுக்கடலை முறுக்கு) /Roasted Gram Flour Murukku
In the ‘Deepavali Special’ snack series today am sharing recipe for Pottukadalai Murukku (Roasted Gramflour murukku). I have used single star plate (ஸ்டார் போட்ட அச்சு) to prepare these murukkus. This is the first time I am using that plate and hence it took a while for me to shape murukku perfectly
Ingredients
  • (u0baau0bcau0b9fu0bcdu0b9fu0bc1u0b95u0bcdu0b95u0b9fu0bb2u0bc8) 1Gram Roasted cup
  • 3tbsps Besan Flour Chick Pea flour/ (u0b95u0b9fu0bb2u0bc8 u0baeu0bbeu0bb5u0bc1)
  • 3tbsps Rice flour(u0b85u0bb0u0bbfu0b9au0bbf u0baeu0bbeu0bb5u0bc1)
  • 1tbsp Butter
  • 1/4tbsp Salt
  • 1/2tbsp Jeera Seeds
  • 1/4tsp Hing
  • 1/2tsp ChilliPowder (optional)
  • Oil for frying
Instructions
  1. In a mixie, grind the roasted gram to fine powder
  2. Sieve roasted gram flour, besan flour and rice flour separately.
  3. Take all the ingredients except oil in a wide bowl.
  4. Mix everything together. Start adding water little by little and then form a smooth dough.
  5. The dough shouldn’t be too sticky.
  6. Close the vessel with a warm cloth. This prevents dough from drying out too quickly.
  7. Now grease the murukku press(u0baeu0bc1u0bb1u0bc1u0b95u0bcdu0b95u0bc1 u0baau0bbfu0bb4u0bbfu0bafu0bbfu0bb0 u0ba8u0bbeu0bb4u0bbf) with little oil and then fill it with dough.
  8. Use ‘One star’ (u0bb8u0bcdu0b9fu0bbeu0bb0u0bcd u0b85u0b9au0bcdu0b9au0bc1) plate as base and then start shaping murukku on a separate ladle as shown in below picture.
  9. If you want to use thenkozhal plate (the one with 3 holes), you can use that as well, to shape murukku.
  10. Heat oil in a kadai and then immerse this ladle in oil.
  11. Fry in a medium low flame and wait until they turn golden brown.
  12. If you are using chilli powder, the color might change quickly but sometimes it would be chewy. So just try to fry murukku in a low to medium flame.
  13. Remove the murukku from oil and drain any excess oil.
  14. Crunchy Roasted Gramflour murukkus are ready to be served with hot tea or coffee.
