Rava Dosai/Rava Roast
Another popular breakfast in TN. You have to get the proportions of flour & rava correctly or else dosai will not have the crisp texture.The batter has to rest for about an 1 hr atleast. It goes well with chutney/sambar/molagapodi. With the following measurement you can prepare around 10-12 dosa

Ingredients
Instructions
  1. In a vessel mix rice flour,rava,maida with salt
  2. The ratio of rice flour : rava : maida is always 2:1:1
  3. In case if you are preparing for a bigger family adjust the measurements accordingly
  4. Add water,yogurt to the flour mixture and let the batter be thin (thinner than the usual dosa batter).Let it sit around for about an hour
  5. Heat Dosa Tawa/laddle with oil one tbsp
  6. Add cashew nuts,mustard seeds,jeera,pepper,curry leaves
  7. Saute for about a minuteThen add chopped onions,ginger,green chillies .
  8. Continue sauteing for about 3-5 minutes.Then mix these with the batter
  9. Pour dosa batter in the laddle and sprinkle oil around it
  10. Wait until side of dosa is cooked one
  11. Flip over to the other side and wait until it turns golden brown
  12. Crispy rava roast is ready to be served
