  1. Preparing Dough :
  2. Soak rice in water for about hour one
  3. Rinse and drain water completely
  4. In a mixie grind rice to a smooth batter by adding little water at regular intervals
  5. Within 10 minutes you will get a smooth white batter
  6. Heat sesame oil in a non stick frying pan
  7. Add the rice batter, salt and keep on stirring.Ensure no lumps are formed.
  8. Once the rice is cooked, it will start leaving the pan.
  9. In this stage turn off the stove. Knead it to a smooth dough and make equal sized small balls.Close it with a warm towel.
  10. Preparing Poornam/Coconut filling :
  11. Heat 1/4 tbsp of ghee in a kadai.
  12. Add shredded coconut. Saute until it becomes light golden color.
  13. Then add jaggery and cardamom powder.
  14. Keep sauteing for a minute or two. Do not add water.
  15. Jaggery starts melting and it will be mixed with coconut completely.
  16. Coconut poornam/filling is ready.
  17. Kozhukkattais :
  18. Apply some sesame oil in your hands and take a dough ball in your hand.
  19. Start forming a cup with dough ball and keep the filling inside.
  20. Close the filling and make your desired shape.
  21. This is the most difficult part. Try not to add too much of filling. This will break the outer layer of the kozhukkattai.
  22. Steam those sweet kozhukkatais in steamer or in idli-plates for 3-4 minutes.
  23. Do not over steam the modhagams. You will end up loosing the color of modhagams and jaggery will start to ooze out.
  24. Sweet kozhukkattais/Modhagams are ready for Naivedhyam.
