Vegetable Aval/Poha Upma
This is such a simple yet healthy breakfast recipe. Or you can even pair it with curd and have it in your lunch menu. It takes around 15 minutes to prepare this dish. The following measurement serves two.

Instructions
  1. Chop carrot, beans and potato into small pieces. Par boil it in a pressure cooker and keep it aside
  2. Soak avalrice flakes in water for 10 minutes
  3. Wash and drain the water completely. If you soak in water for a long time then the aval becomes soggy and it ruins the taste of Upma
  4. In a frying pan heat oil
  5. Add mustard seeds,urad dal and curry leaves. Let them splutter
  6. Add green chillies, onions and tomatoes. Sautxe9 it for about 5 minutes
  7. Add the par boiled vegetables along with green peas to the pan
  8. Add the dry powders and salt to the above mixture
  9. Now add aval/rice flakes and if you feel the mixture is dry then add very few water drops
  10. Close the pan with a lid for about 4-5 minutes
  11. Let the spices get mixed with the vegetables and rice flakes
  12. Aval Upma is ready to be served with Yogurt and pickle.
