Black Eyed Bean or Karamani(காராமணி சுண்டல்) in Tamil is one of the most popular legumes used for preparing Sundal. I have used white lobia however you could use yellow or red lobia too.Generally this beans needs to be soaked for atleast an hour to ease the cooking process. Hence soak it in advanc

Ingredients

  1. Pressure cook lobia with a pinch of salt for upto 5 whistles
  2. Drain water completely
  3. Heat oil in a nonstick pan
  4. Add mustard seeds, urad dal seeds and curry leaves
  5. Let them splutter. Add red chillies, chopped ginger pieces, turmeric,hing,chilli powder and coriander powder
  6. Saute for about 3-4 minutes in a low flame. Later add pressure cooked lobia
  7. Add 1/2 tsp salt
  8. Close the pan and let them get cooked for about 10 minutes
  9. Atlast add grated coconut and mix eveything well
  10. Once the spices, coconut are mixed with lobia turn off the flame
  11. You can add coriander leaves/mint leaves for garnishing. This step is totally can optional
  12. Karamani Sundal is ready to be served
