Ingredients
Instructions
  1. Boil water in a kettle and keep it ready
  2. In a frying pan add 1/2 tsp oil, salt and roast rice flour for 2-3 minutes in a low flame
  3. Once you smell a nice aroma turn off the flame. The reason to turn off the flame is the moment you add hot water to flour it will start forming lumps. On top of it when the heat is on the dough will become very lumpy.
  4. Add the hot water little by little and keep stirring
  5. Now turn on the flame and let the dough gets cooked. Also don’t stop stirring 😉
  6. You can see the dough getting cooked and it all comes together in approximately 6-7 minutes
  7. Turn off the stove, remove dough from heat
  8. Apply oil in your palms and start shaping the dough
  9. Place the small dough balls in the steamer and steam for 10 minutes (if you have shaped into smaller balls it will take slightly lesser time. So keep an eye)
  10. Heat oil in a pan and add mustard seeds, curry leaves. Let it splutter
  11. Add Urad dal, Channa Dal, red chillies and saute well
  12. Add salt, hing and the kozhukattais
  13. Add grated coconut and mix everything together
  14. Tasty Ammini Kozhukattais are ready to be served
