Apple Burfi
Quick and easy Diwali sweet recipe using Apples and Jaggery. This Apple Burfi is not loaded with ghee too. Perfect low calorie Indian Dessert.

Ingredients
Instructions
  1. Grind Almond and Cashews to a powder. Keep them aside
  2. I usually buy frozen sliced coconut here. I place them in cold water for few minutes
  3. Then after draining the water I grind them in a mixie. If you are using fresh coconut ignore these two steps 🙂
  4. Heat 1/2 teaspoon Ghee in a pan
  5. Add grated coconit and saute until the coconut turns slighty brown in color. Not too dark
  6. Remove coconut and keep it aside
  7. In the same pan add grated apple and saute for a minute
  8. Add atleast 4-5 tablespoons of water and let the apples get softened
  9. In a medium let them get cooked for 10-12 minutes. You will notice a change in color and also when you touch them it would have become soft
  10. At this stage add coconut
  11. Next add powdered jaggery and using a spatula mix jaggery with Apple Coconut mixture
  12. Add a tablespoon of ghee and keep stirring the mixture
  13. After a minute or two add cashew almond powder, vanilla essence, cinnamon powder and cardamom powder
  14. Turn the heat to low and mix everything well
  15. Once a thick dough like Apple Coconut mixture is formed remove it from heat
  16. Apply ghee on a plate or in a box to shape the Burfis
  17. I didn’t have a rectangular box so placed the Apple mixture on a plate
  18. It will be slightly sticky. Use a knife and gently add criss cross marks
  19. Refrigerate the mixture for 30 minutes. This will help in holding the shape of the burfis
  20. Apple Burfis are ready to be served

How to make Apple Halwa :
 
In case if you want you can also convert this Burfi to a Halwa. Consistency is the key for any Indian Sweet. Add little milk, extra two tablespoons of ghee along with jaggery and keep stirring the mixture. You will get a sticky gooey Apple Halwa 🙂
