Beetroot Tofu Tikki
Beetroot Tofu Tikki is a healthy protein rich snack option. You can also have this Tikki for dinner. Filling dish that can be put together easily

Ingredients
Instructions
  1. Wash beetroot well and peel off the skin. Chop them into larger cubes
  2. Pressure cook beetroot cubes for exactly 2 whistles
  3. Once the pressure cooked beetroots drain the water and slightly remove moisture by place it on tea towel. Once they are cooled down grate them using a grater and keep them aside
  4. Heat 1/4 teaspoon oil in a pan. Then add finely chopped onion and grated ginger. Saute for a minute and then add frozen peas. Turn off the heat
  5. Take a wide bowl. Crumble the tofu, add grated beetroot, flax seeds powder, sauteed onion+ginger+green peas, salt and other dry spice powders
  6. At last add bread crumbs. Mix everything together
  7. The mixture will look like this
  8. Shape them into small discs/Tikkis
  9. Heat oil in a pan and pan fry the pieces
  10. Let the heat be medium. Cook atleast 4 minutes on each side
  11. Until you get the crispy coating on both the sides
  12. Serve this delicious Beetroot Tofu tikki as a snack or you can even have it with Burger Buns.
  13. I served the tikkis on a bed of Rocket leaves, added finely chopped onions and tomatoes, sprinkled some toasted sesame seeds & a tablespoon of greek yogurt with dried parsely as a dip
