Carrot Halwa Bites / Carrot Laddoo
I made these Carrot Halwa Bites are inspired from our traditional Halwa recipe. This can be prepared quickly and tastes as good as the halwa. The added nuts + seeds increases the nutritional value of the snack

  1. Grate Carrots finely. If you are using a box grater then use the side which has thin hole so that grated carrots dont take much time to cook
  2. Heat butter in a nonstick pan and add carrots. Saute for a minute
  3. Sprinkle 1/4 cup water approximately and close the pan. Let it get cooked for 10 minutes in medium flame
  4. Then open the lid add milk, condensed milk and mix everything together
  5. Let the whole mixture again get cooked in medium flame for atleast 10-12 minutes
  6. Stir inbetween so that carrots don’t get burned
  7. Grind the Pistachios to a fine powder and keep it aside. We will be using this powder as garnish
  8. Grind together nutritional yeast flakes, desiccated coconut, pumpkin seeds, sunflower seeds,cashews, almonds together. You can use your choice of nuts and seeds based on the availability in your pantry
  9. Now add this powder to the pan and mix it well with carrots
  10. Add cardamom powder
  11. Now place the mixture in a plate and once it is slightly cooled down, start making balls or shape them as you wish
  12. Top it with Pistachio Powder and freeze the Carrot Halwa bites for atleast 25 minutes
  13. Then you can store them in an airtight container and store it in fridge
  14. I wouldn’t recommend storing them outside in normal temperature
  15. If you are craving Carrot Halwa but didn’t want to spend too much time in the kitchen then try these Halwa bites. They taste so good as well as can be made very quickly

Recipe Notes

You can add your own variations to this recipe.Add a handful of Dates along with Carrots and reduce the quantity of Condensed Milk used. You can add Cocoa powder if you want. Also instead if grinding the Desiccated Coconut you can also coat the carrot halwa bites with the coconut at the end. You can add Cinnamon Powder and Vanilla essence too 🙂 The options are endless
