Penne Pasta Upma/ How to use leftover cooked pasta
I tried a smiliar ‘upma’ type preparation with my leftover cooked pasta and it worked great. Didn’t prepare any sauces, just tossed pasta in veggies and chilli powder. It tasted great. It took less than 15 minutes to prepare this easy, simple upma. I have used Penne however you can try this recipe w

  1. Heat oil in a wok or a non stick pan
  2. Add mustard seeds, urad dal,curry leaves. Let them splutter
  3. Now add slit green chilli, ginger pieces. Saute for a minute.
  4. Add chopped vegetables of your choice. I add only onions & tomatoes. You can add carrot, beans,capsicum if you want. Add Salt, Hing and Turmeric Powder
  5. In a medium flame saute until onions become translucent & the tomatoes turn soft.
  6. Sprinkle little water. Add the cup of cooked pasta. We don’want the pasta to be soggy hence I added less water.
  7. Toss it in such a way that they get all mixed with the spices
  8. Close the pan with the lid and let pasta get soaked up in those flavors
  9. Pasta upma is ready to be served with tomato sauce/ketchup/chutney
