Stuffed Capsicum
Very easy to make and you can prepare it as a starter or as side dish for Briyani / Fried Rice. The stuffing inside capsicum is your choice. I did a normal potato stuffing however you can try Paneer, Tofu based too.

Ingredients
Instructions
  1. Boil potatoes mash it and keep it aside
  2. Chop onions, tomato, carrots finely
  3. Heat 1/2 tbsp of oil in a frying pan and add mustard seeds, saunf
  4. Let them splutter. Add curry leaves, ginger garlic paste, chopped vegetables
  5. Sautxe9 for about 3-4 minutes.Add salt, turmeric powder, chilli powder, garam masala powder and close the pan with lid
  6. Let the vegetables get cooked and later add mashed potatoes.Adjust salt according to your taste. The stuffing is ready
  7. Cleaning Capsicum :
  8. Just remove tip of capsicum and cut capsicum into halves two
  9. Deseed it completely
  10. Brush outer capsicum with oil portion
  11. Leave it aside for about ten minutes
  12. Non Microwave method :
  13. Hold capsicum using fork and directly keep them in flame by rotating occasionally
  14. Once the outer layer is cooked, keep the stuffing inside and sprinkle grated cheese on top
  15. Keep the capsicums filled with stuffing inside a pan and wait until the cheese melts
  16. Now serve the stuffed capsicum
  17. Microwave Method :
  18. In a microwave safe plate arrange the capsicums with filling inside
  19. Microwave for about 10 minutes.Once you notice the skin of capsicum is cooked gently sprinkle the cheese on top of it
  20. Keep it in microwave for a minute or until cheese melts two
  21. Stuffed Capsicums are ready to be served
