SweetPotato Green Peas Soup
Great way to add fibre rich veggies in our regular meals. This Sweet Potato GreenPeas Soup can be prepared within 20 minutes.Perfect healthy dinner option

Ingredients
Instructions
  1. Wash Sweet Potato and peel the skin off. If you are using Organic Sweet potato then you can retain the skin as well
  2. Chop Sweet Potato into cubes
  3. Heat a teaspoon of Olive oil in a pressure cooker. Add potato cubes, frozen green peas, green chilli, black pepper corns and chopped ginger+garlic pieces
  4. Saute for two minutes. Add salt
  5. Add 1/4 cup water. Mix it well and pressure cook for 2 whistles
  6. Once it is cooled down grind it in a mixie along with a handful of Mint leaves or coriander leaves
  7. At this stage you can store a batch of this Puree in fridge and then prepare soup later by just adding milk and warming up the mixture
  8. Alternatively you can add 1/2 cup of milk and stir well
  9. Boil the mixture for 2 minutes until you achieve the desired consistency
  10. Adjust salt and sprinkle some pepper powder if you want.
  11. Drizzle olive oil & add croutons. Serve this delicious bowl of soup for dinner or as an evening snack to kids
  12. Healthy, filling nutrient rich soup that can be prepared within few minutes
Green Gram Salad (பச்சை பயறு சாலட்)
  1. In a wide bowl mix pressure cooked Green Gram, chopped onion, cucumber, tomato and salad leaves
  2. Add a pinch of salt, pepper powder, a teaspoon of olive oil and a teaspoon of Honey Mustard Dressing
  3. I used a store bought mustard dressing. If you don’t have it you can just squuze some lemon juice and mix everything well
  4. Delicious Green gram salad is ready to be served
