Instructions
  1. Heat 1/2 tsp of oil in a kadai and add channa dal, methi seeds.Roast until they are golden brown. Later add red chillies, coriander seeds and continue roasting for a minute.
  2. Now add grated coconut/chopped coconut pieces and hing.
  3. Keep sauteing until the coconut turns golden brown. Now grind them to fine powder and keep it aside. Don’t add water while grinding
  4. In the same pan pour remaining cooking oil and add mustard seeds, urad dal , curry leaves. Let them splutter.
  5. Add brinjal, salt & turmeric. Sauté them for about 5 minutes and close the frying pan.
  6. Let brinjal be cooked. After 10-12 minutes add the ground powder which we have prepared.
  7. Keep frying for sometime until the brinjal becomes slightly crisp in nature. If you find brinjal is soggy then add 1/2 tbsp rice flour or corn flour and mix it well. This will remove moisture and keep the brinjals dry
  8. Now brinjal fry is ready to be served.
